The Earth isn't a perfectly round shape either since the moon pulls water closer to it at the equator which leaves some parts of the planet being more flat than round. Again, not giving a shit.

I also assume that there wasn't that many ships sailing around at that time, I don't really think many of them saw any other ships approching a horizon.

Not likely, since the ships came back and we are talking about a race of people who sailed and settled in Europe, Asia and the Americas. It was fairly widespead and well written knowledge in Europe, even in the Middle Ages, that the Earth was round instead of flat.
Even from the shore, you can casually witness a ship's lower portion sinking more and more into the ocean as it travels further out.
